Mediterranean 7-Layer Dip

This "bean dip" is a wonderfully fresh spin on an old classic.  It is chocked full of fresh and humble ingredients that are incredibly nutritious and packed with flavor.

Serve it up with some pita bread  or eat it by itself, and I promise, you will find yourself immensely satisfied!

For a vegan version, just omit the feta cheese.  It is still just as wonderful!

Mediterranean 7-Layer Dip

Serves 4-6

1 16-ounce container of hummus, store-bought or homemade

1/4 to 1/2 cup of sliced kalamata olives (depending on your taste preference)

1/4 cup of chopped red onion

1 cup finely chopped spinach

1/2 cup chopped tomatoes

2 Tb of chopped fresh parsley, oregano and/or basil (or sprinkle with dried herbs)

1/4 to 1/2 cup crumbled feta cheese (again, depending on your taste preference)


Spread the hummus in the bottom of your preferred dish (the bigger the dish, the thinner your bottom layer), I prefer a fun serving bowl or 8x8 glass dish.

Then layer the next six ingredients in the order listed above.  Add a swirl of olive oil on top, though not too much (maybe a tablespoon) and serve with warm naan, tortilla chips (for gluten free), or alone.
